Though pork is inexpensive I do not use it – the reason being my 7 year old declaration to never eat pork again which has been going strong for 19 years now
Because my Dad and I cook all these recipes we stay away from it.
Well my parents were having a little party this week and REALLY wanted pork carnitas – I agreed. Because I love my parents and I thought I should have at least one recipe using pork on this site
My Dad ended up cooking ALL of the recipe – usually it is 50/50 — I make the mess and he cleans it up 😉
BUT the dish was a huge hit ( my dad can cook better than I could ever dream to — so I knew it would be great)
So here is probably the only pork recipe you will see from me till another 750 recipes
My dad forgot to put the tomatillos in the picture — they were chillin on the dining room table 😉
You can substitute the pork for chicken and the recipe will work just as well – I love the fresh flavor scallions, cilantro, and tomatoes gives the dish
This dish is meant to be eaten like a taco – this was enough to feed 8 people at a party
It is a great mixture of fresh and a little spice
We have a few allergies in our family to gluten and dairy – so I am happy to say this dish is dairy and gluten free 🙂

Pork Carnitas Recipe
: Sara
Ingredients
- 1 pound pork shoulder
- ¼ cup of green onion - chopped
- 1 Tablespoon of chili powder
- ¼ teaspoon of hot chili powder
- 2 tomatillos - chopped
- ½ teaspoon of garlic powder
- 1 tomato - chopped
- 4 Tablespoons of chopped cilantro
- Corn Tortillas
Instructions
- Cut the pork into 1 inch pieces - heat corn oil in a large skillet - add pork, onions, chili powder, hot chili powder, and garlic powder. Cook meat - takes about 7- 10 minutes
- Pour water into the pan - enough to cover the meat - lower the heat and reduce for 1 hour
- In a bowl - combine - tomato , tomatillos and cilantro
- Serve with tortillas - pork mixture and tomato mix on top

This sounds really good, I look forward to trying it! Normally, I place a pork roast in the slow-cooker with peperocinis and juice, let it cook on low for about 8 hours or when cooked (remove peppers when done)…shred for tacos (sometimes I get a pan of hot oil and and place the pork inside to get a little brown) you can also place on burger buns for pulled pork sandwiches. So good and flavorful.
